Forgotten Frozen Fruit Salad

My mother(Nana) made a frozen fruit salad that was yummy and I continued to make it every Thanksgiving and Christmas for years. It’s actually really healthy, except for the marshmallows, but it does have bananas, oranges, pineapple, and berries of any kind. Obviously, the marshmallow is in there to entice the kids into eating it.

Anyway, 2021 was the first year that 2 of my girls were with me for Christmas after spending a few years apart. While planning the Christmas feast, we had a discussion wondering why we stopped making our favorite frozen salad. Since is it so easy to make ahead of time, and delicious, we decided to include it in our meal.

After Christmas, we recalled the reason we didn’t make it anymore.

We forget about it in the freezer every holiday and it doesn’t get eaten.  Now, we remember that there were times when we would find it in early spring, lost to the cold clutches of the chaotic freezer.

Ingredients

  • 1 bag of mini-marshmallows

  • 1 can unsweetened crushed pineapple

  • 2 chopped bananas

  • Variety of fresh fruits like berries, cherries and oranges.

Instructions:

Prepare a day prior to eating.

Drain the pineapple juice into a saucepan.

Melt the marshmallows in the drained juice from the pineapple. Allow to cool.

Combine all ingredients in a large bowl. 

Pour the mixture into a container that can be frozen and that will allow the fruit salad to be sliced and served.

You want the mixture to be at least 2 inches thick.

In the past, I have used a glass baking dish, glass bread dish, or extra large ice cube trays.

IMPORTANT: Place a note on the freezer door as a reminder that it is in there.
